If you have some ground beef you don't know what to do with, make this super easy and awesome meatloaf. It is a perfect weeknight meal- when you don't feel like cooking anything labor intensive or that requires much thinking. Mix the ingredients, shape it into a loaf, cook in the oven, and dinner is served! My family normally eats meatloaf with white rice but you can enjoy it with mashed potatoes or pasta; it pairs well with any starchy food.
Ingredients
Meatloaf:
3 pounds of 80/20 ground beef (you can choose leaner fat but the loaf will not be as juicy)
1 1/2 cups of bread crumbs (blend stale bread or use store bought)
1 large egg
1 large yellow onion
2 tablespoons worcestershire sauce
1 tablespoon onion powder
1 1/2 teaspoon kosher salt
1 1/2 teaspoon pepper
Sauce:
1 1/2 tablespoon brown sugar
1 cup ketchup
1 tablespoon worcestershire sauce
Instructions
Meatloaf:
Preheat oven to 350ºF.
Mix together the ground beef, bread crumbs, and onion.
Add the egg, onion powder, salt, and pepper and mix until totally combined.
Shape the meat mixture and place into loaf pan.
Combine the worcestershire sauce, ketchup and brown sugar thoroughly.
Spoon 3/4 sauce onto loaf then poke holes through the loaf (about a 1/4 of an inch, I use the end of a chopstick).
Cover holes with remaining sauce so it will seep through loaf.
Place meatloaf in oven and let cook for 60 minutes. Enjoy!
