Smashed Cucumber 🥒 Salad

This smashed cucumber salad is so good that I can eat it all in one sitting, and I don't even like cucumbers. Season it to your liking by making it more or less spicy 🌶. I happen to enjoy mine spicy. If you plan to make this; I suggest you make it a day ahead to let the cucumber absorb all the wonderful flavors. It makes for a great side dish or a healthy snack.


Ingredients:

  • Persian or English cucumbers ( 11 oz./300 g)

  • 3 cloves garlic, crushed and minced

  • 1 tablespoon Chinkiang vinegar (or rice vinegar)

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1 tablespoon sesame oil

  • 1 tablespoon soy sauce

  • 1 small bunch cilantro, chopped (optional)

  • 2-4 teaspoons Homemade chili oil (or store-bought chili oil), or to taste (Optional)


Instructions:

  1. Remove the tough skins and the ends.

  2. Smash the cucumber with a wide knife (don't be afraid to put some elbow grease in) then transfer to a bowl.

  3. Sprinkle salt, mix well, and set aside for 10 minutes. Discard the liquid in the bottom.

  4. Add coriander (if using) right before serving and enjoy!
